Went up to northern Minnesota to visit a buddy. Had a Blast filming up there and whipping up this awesome whole roasted Chicken<br /><br />INGREDIENTS<br />-Whole Chicken<br />-Fresh Herb Blend (Thyme, Rosemary & Sage)<br />-Onions<br />-Garlic<br />-Lemon<br />-Olive oil<br />-Butter<br /><br />METHOD<br />-Preheat oven to 420 deg<br />-Finely chop herbs & pour over with olive oil (about 3 Tbsp)<br />-Combine oil and herbs until a paste forms<br />-Rub oil herb paste all over bird<br />-using your fingers enter the bird through the neck & gently pull the skin off of the breasts creating a cavity<br />-Stuff the top of the breasts with the remaining herb blend and half a stick of butter<br />-Slice a lemon and stuff cavity (do not overstuff, use about 2 slices)<br />-Place bird on roasting tray over roughly chopped onions, whole cloves of garlic (skin on) & remaining lemon slices<br />-Roast at 420 for 1 hour
